Austrian Summer Salad Recipe #3 - Styrian Corn Salad

Try to use fresh grilled corn
This is perhaps the simplest to make of our series of Austrian summer salad recipes. Serve it as the side for any summer picnic, grill-out, clambake or the like and everyone will sing your praises. The secret? Styrian pumpkin seed oil (kerbiskernol). The other secret? Use fresh grilled corn. If that isn’t possible, go ahead and substitute fresh or frozen kernals. This is also a great way to use any leftover grilled corn from one of those above mentioned events.

STYRIAN CORN SALAD

Styrian Pumpkin Seed Oil

-1 cup grilled corn, cut off the cob
-2 cherry tomatoes
-2 tbs. Styrian pumpkin seed oil (Kerbiskernol)
-2 tbs. apple cider vinegar
-Bit of fresh garlic to taste

-Fresh ground pepper

1. Combine ingredients

2. Chill

3. Serve

Didn’t I say this one was easy?

Serve it alongside Austrian Beet Salad, Potato Salad, Tomato Salad and Cucumber Salad.

Enjoy!
